Variety: Cabernet Sauvignon red variety. D.O. Penedès.

Winemaking: Grape tasting determines the day of the beginning of the elaboration of Sant Joannes red. This begins with a manual harvest of selected plots, which are transported in the shortest time possible to the winery. Once in the winery, the grapes are once again selected prior to being stripped, the first step in the making of Sant Joannes wine. After a soft stripping, the harvest enters the stainless steel trunk-conical tanks for maceration at a temperature of 14 º C, this being for a period of time that ranges from 2 to 4 days. Once the maceration is complete, the mix should be fresh, and with a colour and aroma that indicate the beginning of the next process, which is fermentation. This begins with sowing of yeast and continues for two weeks at a temperature of 25 º C. During this period it is very important to follow the winemaking process, employing in periodic pumping that will bring us both the structure and color of wine.

Once the fermentation is complete we move on to the bleeding and poring, thereby obtaining a young St. Joannes wine. Depending on its features, the winery decides what percentage of wine is placed in French oak barrels for aging, and the time spent in them. This partial aging is intended to imbue the wine with elegance and structure, while retaining the freshness and variety that is a hallmark of Sant Joannes wines. After the aging, the blend is made final, giving us a wine that is rich, structured, intense and smooth, ready for bottling.

Tasting notes: Dark red in colour with elegant shades of purple. Bouquet with cabernet features, dominated by green toasted coffee with a background of ripe fruit in harmony with subtle touches of oak. Over time, hints of spice begin to appear. Very elegant and balanced. In the mouth it is sweet and sumptuous, with overtones of fruit (strawberry jam, cassis…) integrated into the enveloping and pleasant tannin nature of the wine. Soft tannins, without peaks, adding to the velvety texture of the wine and its aftertaste. Wood is present, but very well blended. Part of this wine was aged in 225-litre barrels of French oak for 14 months. The rest was kept in a stainless steel tank, giving it a certain freshness.

Serving recommendations: Serve at 17ºC in a large wine glass.

With food: Cabernet Sauvignon is ideal as an accompaniment to: Camembert and similar cheeses, all red meats, game, rich and spicy pasta sauces, stews.

Note on development in November 2011 it has a strong, full-bodied entry in the mouth and is elegant, round, and velvety from the passage of time and because of the great quality of the vintage.

Winemaking: Maceration of the harvest for 3 days at the coolest possible temperature. Fermentation at 25ºC in a stainless steel truncated conical tank. Run off by bleeding, minimum pressing. A third of the wine is aged in French oak casks (Nevers) for 6 months.

Tasting notes: cabernet, which is discerned in the fruitiness of its nose. Fruit on toasted background that originates not so much from the oak wood in which it has aged, but rather from the notes of green coffee beans, exquisitely integrated in the aroma of the oak. Its fresh fruit also suggests an elegant and youthful wine, yet with a great balance of mildness and character. The wine is from a vintage in which fineness and mildness predominate over tannins. Rather a mild year, the sensation in the mouth is not aggressive; the tannins have been fully integrated and softened with the passage of time, yet with out losing composure.

Tasting notes: development November 2011: colour with touches of tile that already suggest proper development in the bottle. Gentle nose of significant aromatic intensity and of a marked St Joannes type. Refined with wood featuring in its candied background, making it reminiscent of French wines in its complexity. Elegant wine with touches of herbs and tealeaves. Nervy in the mouth, which emphasises the mildness of its tannins that are present yet not in the least aggressive.

Serious in the mouth and elegant from the moment of entry. Long aftertaste.

Serving recommendations: Serve at17-18ºC

Pairing: goes perfectly with dishes for which a wine’s main virtue is not astringency, but body and tannins. Cured cheeses, pastas and rice dishes, white meats garnished with sauces, even slightly fatty.

Winemaking: separately harvested grape varieties. Cabernet sauvignon fermented in a truncated conical tank with pumps. Ull de llebre fermented in a small tank with traditional batonnage with no pressing. Ageing in casks (Nevers St Joannes).

Tasting notes: entry in the mouth reminiscent of wines from sunny regions: explosion of fresh fruit from entry. End palate that fades elegantly.

Vivid dark red colour with touches of blue and lilac typical of Cabernet Sauvignon varieties. Spicy and tealeaf notes blend with those of the fruit. Green asparagus and subtle touches of wood are also appreciable.

Complex nose typical of Cabernet and its youth, with a mix both of fresh fruit and candied notes.

Elegant nose characteristic of warm climatic zones. Entry in the mouth explodes with fruity touches right from the start, which blend elegantly with time to yield a subtle aftertaste. Present yet mild tannins also blend with the fruit to create a fine balance.

Serving recommendations: serve not very warm, between 17º and 18ºC.

Pairing: oes perfectly with all kinds of mild meat dishes, rice dishes and the best assorted cured pork products. Sublime with pastas and savoury cocas (bread bases) such as those made with baked vegetables.
